I have to tell you about the time I made these seitan tacos with salsa and avocado and honestly it was a little messy but so much fun because the kids kept stealing the avocado while I tried to slice it and it made me laugh so hard because I almost forgot to season the seitan yet, somehow it still turned out amazing because the flavors just worked together perfectly and I couldn’t believe how simple it was to throw together a dinner that felt fancy yet cozy at the same time.

Another day I was rushing home from work and decided to whip up the seitan tacos with salsa and avocado because I had nothing ready for dinner yet luckily the tacos came together in minutes and even though I spilled a little salsa on the counter it didn’t matter because everyone loved them anyway and I kept thinking wow this recipe is a lifesaver when you’re tired and hungry yet still want something healthy and fun to eat.

I remember one weekend I invited my neighbor over and wanted to impress her so I made these seitan tacos with salsa and avocado but I forgot to warm the shells at first which was a little embarrassing yet funny because we just laughed and ate them anyway and honestly that little mistake didn’t change a thing because the tacos were so good and I realized sometimes imperfections make food even more memorable and enjoyable.

You can enjoy these tacos with so many sides like roasted sweet potatoes fresh corn salad, or a homemade guacamole cheesy nachos.
